The basic honey in barrels is prepared liquid and free of crystals by means of fast decrystallisation with filtration at 200 micron, immediate cooling with recovery of the aroma and, to conclude, packing in new containers.Ready for immediate use in food products. Guarantee of non-crystallisation during at least 3 months.

In theory there is little danger partially thanks to the high sugar concentration, the low aw value and the low acidity.However, it is important to act with care when using honey. Remains that are exposed to the air may absorb water (honey is hygroscopic), become filthy and start fermenting.
